For the modified spanish tortilla:
Slice the potatoes (as thin as possible!). Chop garlic, onions and tomatoes. Sautee and add the potatoes. Get eggs, season with salt, and beat (do not overbeat). Mix the sauteed potatoes in egg and cook in non-stick frying pan.
For the beef salpicao:
Marinate beef cubes in soy sauce, paprika, pepper and coconut sugar for 4 hours. Mince garlic and brown in butter. Get beef marinade and put it in the pan with the garlic. Mix well and add sauce. Add salt to taste (careful with salt it can actually get too salty).

i would want to try your beef salpicao recipe, but i don't know if i can find coconut sugar here. any substitute?
hi ms firefly! you can use brown or muscovado sugar. i just use coconut sugar because it has a lower glycemic index :-)
thanks for the info, i'll try again today to find coconut sugar, this is the first time i heard of it, really. otherwise, i have lots of brown sugar, it's the only sugar we use around the house. :)
