This is one of my favorite 'serendipity recipes' that I have cooked over and over again, and I'm calling it Italian Cordon Bleu.
One weekend a few months ago, there was nothing left in our freezer but chicken breasts, some fresh unflavored bacon strips, and a small chunk of organic white cheese that I bought in Tagaytay. I was feeling experimental so I tried to put myself in the shoes of my kitchen god, Jamie O. What would Jamie do?
So I fried the bacon and set it aside. I then sliced the chicken to create a flat fillet, sprinkled rosemary, thyme, marjoram and sage, and then folded it with tomato, white cheese and bacon at the center. I seasoned it with salt, pepper and coconut sugar on the outside and cooked it in the bacon fat left in the pan.
The chicken product was a cooking eureka for me. It was so good I've been cooking it every other week or so!

hi sheng! the recipe is there below the picture :-) careful with salt though if you're using kesong puti, pinas white cheese tends to be salty. if you can get unsalted ones, all the better! (the ones i bought in tagaytay weren't salty)
i made your JIC recipe last night, and i added chopped flat mushrooms and a handful of chopped butternut squash and spinach for the greens. winner! the leftovers i packed in foil and heated for brunch today. :)

oh you should try cooking the chicken, it's really yummy. (can't go wrong with bacon, tomato and cheese! hehe) especially if served with pesto pasta.
Mai, I love all your food posts. I've never heard of malunggay pesto! And this one made me miss kesong puti so much, I'm gonna have to go home and be happy with buffalo mozz. NOT the same at all!
